Our life's journey can be compared to making bread - we start from humble beginnings. Just as dough rises during the baking process, our lives also expand over time. My name is Pablito Casiño. I own this bakery, although I have passed ownership to my four children. Yeast enables the bread to rise and grow. This bakery was founded by my parents. They told me my father started baking in 1944. My father created all the recipes, initially selling pandesal and bonete breads. At first, my father did the baking while my mother managed the storefront with our assistance, despite our young age. Since I was 10, I observed the bakery's daily operations. I used to help my father prepare the dough for baking. Even in high school, I continued assisting him, allowing me to learn and master all his recipes and techniques. Initially, it was a family-run enterprise. However, as demand increased, running it alone became challenging, so we hired additional staff.

It was a bright day in early March, the sun was shining and a substantial fall of fresh snow lay pristine under an arching blue sky. I stepped off the train at Lairg, midway along the branch line that winds its way from Inverness to Wick in the far north of Scotland and wondered whether the postbus would be in the station car park or somewhere between where I stood and Lochinver, lodged up to its headlights in snow.
To the Edge of Coyote Gulch
Author's preface: This is chapter one of a five part series which can be found here. “Where will you be heading into the gulch at?” asked the National Park Service Ranger stationed behind the counter at the Escalante visitor center upon hearing our request for a backcountry permit. When my companion Kat replied “40 mile trailhead” the old woman’s head snapped up sharply and she fixed us both with a hard gaze. “You do realize the trail there is a 45 degree descent. Are you both capable of handling that, with packs?” We nodded as she gave us the once over, appearing satisfied with what she saw she handed over the permit and we turned to leave. A 45 degree descent sounded challenging but that was exactly the reason we had made the long trip out to the Utah desert, to test ourselves against some of the most difficult backpacking conditions to be found in the United States and prove our mettle. At the time I was grateful for the heads up and warning, later I would curse the old woman for what she neglected to tell us. The 45 degree descent into the gulch was a one way trip, it simply was not possible to return up out of the gulch the same way.
